Eating for Energy + Sweet Figberry Chia Pudding

Eating crappy food these days?  Seriously, who has time for that anymore?  Food has the power to nourish you or destroy you.  It can make you feel alive and vibrant with energy or make you sluggish and lethargic.  Breakfast is really the most important meal of the day because it dictates how the rest of your day is going to go.  If you have a nutritious, energizing breakfast that satisfies you you’ll be less likely to binge throughout the day, you’ll feel the good energy post-eating and you’ll want to continue on that good streak the rest of the day.  If you’re not hungry first thing in the morning, drink as much water as you can for energy and to stay hydrated.  (You should drink water first thing in the morning before eating, anyways, preferably warm water with lemon.)  Then, make sure your first meal of the day is a good one.

So which foods give you energy and which foods don’t?  The answer is really simple.  Foods from nature give you energy; plant foods that are alive, vibrant, and colorful give you energy; leafy greens and vegetables, green juices, and green smoothies; proteins that are easily digested; unrefined, whole grains like quinoa, rolled oats, millet, and buckwheat.  Simply put, whole foods–real foods, give you energy.  Anything processed, refined, and full of sugar and artificial flavorings is likely to zap the energy right from you.  It’s also best to keep meals simple, light, and frequent rather than heavy and sparse.

To make this easier, be prepared!  If I know I have a busy week, I’ll stock up my fridge with things like chia pudding that takes 2 seconds to throw together, overnight oats, quick smoothies to run out the door with, carry snacks with me throughout the day, and know if I’m eating out I have my Clean Plates App to help me find any healthy/clean restaurant in the city.  If you know you have a busy day or week coming up, do yourself a favor and go the extra mile to stay energized through having healthy snacks and meals quickly prepared.  You’ll feel less frazzled, over-caffeinated  and stressed out.

Chia Pudding is one of my favorite energizing foods!  It’s the easiest thing in the world to make.  Chia seeds are tiny little seeds that expand into a gel-like texture when mixed with any liquid (think tapioca pudding).  They’re flavorless so you can throw them in with anything for extra health benefits.  They’re packed with fiber, antioxidants, and omega-3 fatty acids.  Chia seeds boost brain power, are good for your heart, skin, hair, nails, digestive system, and a strong immune system.  That’s a lot for a tiny little seed!

Sweet Figberry Chia Pudding

  • 1/4 cup Chia Seeds
  • 1 cup Almond Milk
  • 3 Mejidool Dates
  • 1 tbs Raw Honey
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon

For Toppings:

  • A couple of figs
  • A couple of strawberries, sliced
  • Handful of walnuts, chopped

Directions:  Blend all ingredients except chia seeds to create a sweet pudding base.  *When blending dates, I usually soak them in water for a while before so they’re easier to blend.  In a small container, add the base and stir in the chia seeds.  Seal the container and leave in the fridge for a couple of hours, or overnight.  The seeds will expand and soak up the sweet almond milk base.  Then, add the toppings (or whichever toppings you prefer).  So simple!
